Fluffy ricotta, creamy cheese, soft mozzarella, crumbly feta…these are all delicious examples of fresh cheese.
Cheese that falls into the category of fresh cheese is loved for its simple but satisfying flavor. Fresh cheese usually tastes mild, sometimes salty or tangy, high on probiotics & highly nutritious.
Cheese at Käse is handmade – the cheese production follows western traditional methods that were adapted to the Chennai weather conditions.
Our methods strive to retain authentic texture and taste of traditional artisan cheese and guarantees the natural balance of vitamins, proteins and fat which gives cheese its unique characteristics. However, weather conditions and the raw milk lend our cheese its own unique characteristics.
All our cheese are made from grass fed cow’s milk. We have two sources and have ensured that our vendors meet hygiene standards and that the animals are healthy. We make our cheese from Monday to Friday – orders need to be placed at least 24 hrs in advance.
We do not use preservatives, artificial flavors or colors. Neither do we use emulsifiers commonly used in industrially produced cheeses to retain moisture and fat.
We started KÄSE to address the lack of fresh, affordable, healthy cheese in the local supermarkets – ones that are not sourced from thousands of miles away but locally made. Käse is an initiative to locally produce ‘clean’ (not processed, without preservatives) fresh cheese and trains people with disabilities the art of cheese making.
Käse has been started by two Chennai based entrepreneurs – Anuradha Krishnamurthy & Namrata Sundaresan.
Anu is the founder of Can Do a BPO with a difference – that focusses on the abilities of people with disabilities and provides them training and employment in tele-calling and data/desk research services.
Namrata is founder partner of a strategy consulting firm Group IBI that specializes in international trade & investment. She is passionate about artisan food and a staunch proponent of clean eating. These are the two traits that reflect in Käse as well. Eat clean, eat healthy & yes, Eat More Cheese
We organize monthly tasting sessions. Write to us for an invitation.
We conduct monthly sessions on cooking with our cheese. An informal session followed by lunch or a high tea.
We will travel for a taste of Käse from different parts of the world – cheese paired with wine of the region.
